While researching his forthcoming cookbook, Modernist Pizza, Nathan traveled to Italy three times before he felt satisfied in his quest for answers. Many pizzerias claim to serve Neapolitan-style pizza, but very few hold up to the expected quality, and even fewer abide by the guidelines set in place by the Associazione Verace Pizza Napoletana. A true Neapolitan pizza bakes for no more than 60-90 seconds in an oven that reaches 850—900 °F. It needs to be consumed within minutes after baking or it’ll run the risk of becoming soggy.
