Also known as bonito flakes, it’s a staple ingredient in Japanese cuisine that’s made from smoked, dried, and fermented skipjack tuna. Known for its rich umami flavor, katsuobushi is commonly used in soup stock, seasoning, and snacks. Nathan’s image offers a highly magnified view, revealing the microscopic ridges on the flakes that are invisible to the naked eye.
