Before Nathan founded Modernist Cuisine, he was the chief technology officer at Microsoft for 14 years. With his deep roots in software development and his love for technology, it was no surprise when he wrote a custom mathematical algorithm for this perfect 7-by-7-inch square, which mapped out where each flavor should go. In the end he decided against it, allowing his creativity, and the ice cream, to flow organically rather than technically.
